Salisbury Steak

Salisbury Steak

~This is a recipe my family created, I have never written it down before today~

Ingredients:

6-8 Pre-formed uncooked hamburger patties
1 medium yellow onion - sliced
2 - 4 Tablespoons butter
2 Tablespoons Gluten Free or Regular Flour
1/4 Teaspoon black pepper
1 1/2 - 2 cups Beef broth

Preheat oven to 375*F
Arrange uncooked hamburger patties in a baking dish (I use a 9x13 - the patties overlap), set aside
Saute' onions in  2 Tablespoons butter
If there is not butter left in pan - add remaining 2 Tablespoons of butter to pan
Whisk in flour and pepper- cook for 1 - 2 minutes
Slowly whisk in beef broth - cook while whisking until thickened
Remove from heat - pour over uncooked hamburger patties
Bake at 375*F for 30-45 minutes (or until patties are cooked thoroughly)

*serve over mashed potatoes

Homemade Cheese Sauce

Cheddar Cheese Sauce

Cook time: about 15 mins
Serves: 4-6 

Ingredients:
8oz Sharp Cheddar Cheese - shredded
1 Tablespoon Cornstarch
1 (12 oz) can Evaporated Milk
2 tsp Hot Sauce (optional)

-Add shredded cheese and cornstarch to a large bowl - combine
- Transfer to a medium sauce pan
- Add evaporated milk and hot sauce
- Whisking over low heat, stirring constantly with whisk until melted, bubbly, and thickened (about 5 minutes)

*Mixture will look thin and grainy at first, but will thicken and come together after heating.
* Thin to desired consistency with addition milk
*IF you use preshredded cheese, only use 1/4 Tablespoon cornstarch (I have NEVER used preshredded cheese)
*Serve immediately with fries, chips, hamburgers, etc.

Biscuits and Gravy

Buttermilk Biscuits and Sausage Gravy

For Biscuits

Makes about 7 biscuits
Oven Temp: 400*F

Ingredients:
1 3/4 cup Gluten Free Flour (can use regular all-purpose flour as well)
2 Tablespoons Sugar
2 teaspoons Baking Powder
1/2 teaspoon salt
1/2 cup (1 stick) Cold Butter
2 large Eggs 
1/3 cup butter milk, plus 3 Tablespoons for brushing the tops before baking

Pre-heat oven to 400*F
- Line baking sheet with parchment paper or lightly grease.
- Whisk together flour, sugar, baking, powder, and salt in a large bowl until well combined.
- Cut in cold butter. Mixture will be crumbly.
- Whisk together eggs, and 1/3 cup buttermilk in a medium bowl until frothy. Pour into flour mixture while stirring with a fork until dough forms.
- Turn dough onto a floured surface. Carefully roll dough out to 1/2 inch thick. Fold dough together and repeat 3 times.
- Cut biscuits with a biscuit cutter and place 2 inches apart.
- Lightly brush with remaining buttermilk on top
- Freeze flat for 20 minutes
-Bake 15-20 minutes until golden brown
- Cool 5 minutes, remove and enjoy.

*I have used whole milk instead of buttermilk. I have also baked without freezing - both work, I haven't figured out the reason for freezing first.

For Sausage Gravy

Ingredients
1 lb bulk sausage
2 Tablespoons reserved drippings from cooking sausage 
2 Tablespoons Gluten or Regular Flour
1/8 teaspoon black pepper
1 2/3 cups milk

- Crumble and cook sausage in a large sauce pan - drain reserving 2 Tablespoons drippings, set cooked sausage aside
- whisk together, in large sauce pan the reserved drippings and flour - cook for 1-2 minutes
- whisk in pepper
- slowly whisk in milk
- continue whisking until bubbly
- add the cooked sausage and stir to combine
- remove from heat and serve over biscuits

Cheesy Ham and Hashbrown Casserole

Cheesy Ham and Hashbrown Casserole

Oven Temp: 350*F
Cook Time: 60 Minutes

Ingredients:
2 lbs frozen hashbrowns - thawed
2 cups cooked diced ham
3/4 cup melted butter (1 1/2 sticks)
1/4 tsp pepper
1 tsp salt
1/2 cup onion
10 oz can cream of soup (or Homemade Cream Soup)
2 cups sour cream
2 cups cheddar cheese - shredded

- Mix all ingredients together in a large bowl
- Transfer to a greased 9x13 inch baking dish
- Bake at 350*F for 60 minutes
- Serve

I really enjoy this recipe. Lots of easy "on hand" ingredients just thrown in a bowl in no particular order, mixed together and baked! It doesn't get much simpler! 

When I made this yesterday (April 8, 2020) I didn't have any pre-cooked ham, but I did have some frozen ham steaks in the freezer. So I started cooking dinner at 1:30pm *YIKES I KNOW* But all I did was pop the frozen ham steaks in the oven at 350*F for about an hour and 20 minutes. I then pulled them out and allowed them to cool on top of the stove. Once cooled, I diced the ham into small bite sized pieces. About quarter to half inch bites. 

The recipe calls for 2 cups of diced ham (as my picture shows), well I had 2 ham steaks already cooked up, so I diced up the other one as well for a total of 4 cups diced ham. 
While I was dicing the ham my oldest daughter, K, was shredding the cheese. 
Not just ANY ol' cheese, but the BEST flavored cheese I have found in our small town grocery store!  Tillamook Cheese is the BEST!!! I really wish our stores carried more of their products! I may be a slight cheese snob and I'm completely ok with that! 

Time to start throwing everything in a big bowl! Frozen hashbrowns first! I just add the ingredients as they are listed, so I don't miss any of them. 


 Don't forget to make your homemade cream soup! This is absolutely the best! I used the ham drippings as part of the stock needed for the recipe. It comes together really quick and makes anything calling for a can of cream of anything soup, taste SOOOO YUMMY!!!!!
 Dump it all in a baking dish, smooth it out and pop it in the oven for an hour! It looks so creamy and yummy already!!!!
 Once cooked, dish it out and enjoy! So good!!! I'll admit I had some of the leftovers for lunch today and it was just as delicious as it was last night!!!

SouthWest Egg Bake

SouthWest Egg Bake


Prep time: 30 minutes
Cook time: 60 minutes
Oven set to 325*F
Serves 8-10

Ingredients:
24 oz Sausage crumbled
8 slices bacon - crispy
15 eggs
3/4 cup milk
1 cup sour cream
2 cups shredded cheddar cheese
1/2 cup diced green chilies
1/4 cup green onions - sliced
1 tsp garlic powder
1 tsp salt
1 tsp pepper

1. Preheat oven to 325*F.
2. In a large skillet, crumble sausage and cook until done. Drain grease and set aside.
3. In a large skillet, cook bacon until crispy, place on paper towel. Crumble after bacon has cooled.
4. In a large mixing bowl, add eggs, milk, sour cream, and seasonings. Whisk until well blended.
5. Add cheese, diced green chilies, and green onions, mix until combined.
6. Add cooked sausage and bacon - mix well.
7. Pour into a greased 9x13 inch baking dish.
8. Bake uncovered for approximately 55-60 minutes, or until eggs are done.

*Serving suggestions - serve with hashbrowns or country potatoes.

Home Made Cream of Soups

Condensed Cream of Soup


1 1/3 cup stock or broth (I use chicken stock)
2/3 cup milk
1/3 cup flour (I use Gluten Free flour)
1/2 tsp salt
1/4 tsp garlic powder
1/4 tsp black pepper
1/4 tsp onion powder

(optional ingredients)
1/8 tsp celery seed
1/8 tsp dried thyme
1/2 cup finely chopped mushrooms

 - Add broth to a medium sauce pan, bring to boil on medium high heat
 - Whisk together milk and flour in a separate bowl
 - Slowly pour milk flour mixture into boiling stock - Whisk to combine
 - Add remaining ingredients
 - Reduce heat to medium
 - Stir constantly
 - Boil for 3 minutes
 - Remove from heat
 - Use within 1 week

Cowboy Casserole (Bowls)

Cowboy Casserole (Bowls)

1 1/2 lbs ground beef
1 Medium onion - chopped
3 Cloves garlic - chopped
1 can (15 oz) whole kernel corn
1 can condensed cream of mushroom soup
2 cups cheddar cheese - shredded
1/2 cup Milk
4 Tablespoons Sour Cream
1 Bag (30oz) frozen tator tots - thawed

- In a large skillet cook the onion until tender and translucent. Add the chopped garlic and cook for 1 minute more. Add the beef and cook over medium heat until no longer pink. Drain the mixture and place in a large bowl and set aside.
- In a small bowl combing the soup, milk and sour cream. Whisk until smooth. Add to hamburger mixture and stir to combine. Add corn and 1 cup of shredded cheddar cheese. Gently mix to combine.
- Grease a 9x13 inch baking pan. Layer half of the tator tots on the bottom, pour the hamburger mixture, then layer with more tator tots. Sprinkle with remaining cheese.
- Bake at 350*F for 25-30 mins until golden brown and crunchy.

*How we make the bowls:
We fry the tator tots. We do not mix corn or cheese into the hamburger mixture.
- Put tots in the bottom of our bowls, layer with meat mixture, corn, and cheese. A couple of us like to add green beans as well. *I will try to remember to add photos the next time we make Cowboy Casserole Bowls!
